No Bake Pistachio and Strawberry Cereal Bars

Sometime in July, there was a week long heat wave and that only meant I wasn't going to turn my oven on. But there was an itch to just make something in the kitchen that I couldn't shake off. I raided my pantry and found an unopened box of Cheerios that I knew I wouldn't eat as a breakfast meal, so it had to be used in another way. The pistachio and freeze dried strawberries came on later in the process because I wanted to add some color and texture to these bars. The result was a small, satisfying, and colorful cereal bar!

 

Ingredients

  • 3/4 cups (30g) Cheerios

  • 6 tablespoons (84g) unsalted butter

  • 1/3 cup + 2 tablespoons (155g) honey

  • 3/4 cup (160g) light brown sugar

  • 1/4 cup (33g) unsalted pistachios, roughly chopped

  • 1/4 cup (5g) freeze dried strawberries, roughly chopped

Directions

  1. Line a square pan with parchment paper and set aside.

  2. In a small saucepan over medium heat, combine the butter, honey, and sugar. Stir until the butter has melted and the sugar is dissolved. Set aside and allow to cool for a few minutes.

  3. In the meantime, stir together the Cheerios, pistachios, and strawberries in a large bowl.

  4. Pour the mixture into the lined pan and grease your hands lightly with oil or cooking spray. Press the mixture down evenly to all sides.

  5. Lay a parchment paper over the mixture and press down firmly to ensure the bars do not fall apart when cut. Place into the freezer for at least 30 minutes.

  6. Once hardened, cut into squares or rectangles.

  7. These can be kept in the fridge or freezer in an airtight container for up to 1 week.
