Fresh Strawberry Milk (Korean Inspired)

Chances are that you have been recommended a street food or cafe video on YouTube. Many of the videos come from countries like Taiwan and South Korea which are bustling with several street food vendors and minimalistic cafes. It's the way that they turn such a simple dish, dessert, or beverage into something intricate and aesthetic that lures your into these videos.


Fresh strawberry milk was one of the many beverages that was reoccurring in so many videos. It's something I haven't seen anywhere in NYC, and so I set out to test some at home. The milk is nothing short of delicious and refreshing, especially with small diced strawberries on top!

 

Ingredients

  • 20 fresh strawberries

  • 3 tablespoons (37g) granulated sugar

  • Choice of milk

Directions

  1. Wash and trim all strawberries.

  2. In a medium-sized bowl, add 15 of the strawberries. Using a fork or pastry cutter, mash the strawberries until no large bits remain. Add the sugar and mix. Set aside.

  3. With the remaining 5 strawberries, dice them into small pieces. Set aside.

  4. Transfer the mashed strawberries into a saucepan. Over medium-high heat, bring the mixture to a boil, stirring occasionally. Once boiled, remove from the heat and transfer to a shallow bowl. Let it cool completely at room temperature or in the fridge.

  5. Once cooled, depending on the size of your glass, add 4-6 tablespoons of the puree to the bottom of the glass. Add in your choice of milk and top with the diced strawberries. Mix the puree and milk well before drinking.

*Additional Notes*

  • You can add the puree, milk, and diced strawberries into an airtight jar and keep in the fridge for up to 2 days. Shake well before drinking. Consume within that timeframe or the milk and puree will begin to separate.

  • The puree can be kept in an airtight container separately for up to 2 days.
