Cookies are at the top of my cravings list. But most times I crave two or three different kinds of cookies at the same time! Do I want Chocolate Chip vs. Oatmeal Raisin? Why not both?! Even better, why not have another type of cookie?
Naturally, the only solution to my cookie conundrum was to create one cookie dough, divide it, and add the fillings or flavors I wanted - Chocolate Chip, Oatmeal Raisin, and Brown Sugar
There are so many variations that can be made with this dough, and everyone can find their favorite. Maybe you'll reach for a chocolate chip. Or an oatmeal raisin. Maybe you'll take a bite of everything and satisfy all your cookie cravings at once.
Ingredients
2 1/4 cups all purpose flour (spoon & leveled)
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened (1+1/2 stick)
1/2 cup granulated sugar
1 cup brown sugar
2 eggs, room temperature
1 teaspoon vanilla extract
Oatmeal Raisin
2 cups old fashioned rolled oats
1 cup raisins
1 teaspoon cinnamon
Chocolate Chip
1 1/2 cup semi-sweet chocolate bar, chopped
Directions
Line two baking trays with parchment paper or a silicone mat. Set aside.
In a bowl, whisk together the flour, baking soda, and salt. Set aside.
In a separate bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. It should resemble cottage cheese.
Add the eggs in one at a time, mixing well after each addition. Add in the vanilla extract and mix.
Add the dry ingredients into the wet and fold until combined.
If you are craving brown sugar cookies, no need to add anything else. Form the dough into golf-sized balls and press down gently. Place on the baking tray 2 inches away from each other.
For oatmeal raisin and chocolate chip cookies, fold in the additional ingredients. Form into golf-sized balls and press down gently. Place on the baking tray 2 inches away from each other.
Place the tray of cookies in the fridge for 1 hour.
Take the tray out and let it sit at room temperature for 10 minutes.
Preheat the oven to 325 degrees F. Bake the cookies for 10-12 minutes.
Cool on the baking tray for 10 minutes, then transfer to a wire rack to cool completely.
