Banana muffins are a staple recipe. My earliest memory of baking was actually making banana bread with my sister. It is a family favorite dessert and disappears from the table in just a few days! Nothing beats the smell of bananas and sugar together!
Ingredients
1/2 cup (1 stick) unsalted butter, room temperature
1 cup sugar
2 eggs, room temperature
3 bananas, ripe
1/2 teaspoon vanilla extract
1 1/2 cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Crunchy Sugar Topping (optional)
2 tablespoons sugar
2 tablespoons brown sugar
Directions
Preheat the oven to 350 degrees F. Line a muffin or cupcake pan with paper liners.
In a small bowl, mash the bananas with a fork. Set aside.
In a medium sized bowl, cream the butter and sugar until light and fluffy. It should look like bits of cottage cheese. Add the eggs one at a time, mixing well after each addition. Add the mashed bananas and vanilla extract.
In a separate bowl, combine the flour, baking soda, and salt.
Add the dry ingredients into the wet, and fold until the flour is just incorporated.
Using a 1/4 measuring cup or ice cream scooper, scoop the batter into the muffin pan.
For a sweet and crunchy muffin top, sprinkle white and brown sugar on top of the batter.
Bake in preheated over for 30 minutes. Stick a toothpick in a muffin to check it is fully baked.

Want to try this as a loaf? Line a 9x5 in loaf pan with parchment paper and bake for
55-60 minutes.
