Rice Krispies may not be my go-to cereal, but they do make for a quick, simple, and delicious dessert. One day, I was raiding the pantry and found an unopened box of crisped rice cereal, but no marshmallows! Oh the horror!
As I decided to quell my sweets craving for a peanut butter sandwich instead, I thought, why not just make peanut butter rice krispies and better yet, why not spread some jam on top?
Ingredients
3/4 cup peanut butter
1/3 cup maple syrup
2 tablespoons coconut oil
1/2 teaspoon vanilla extract
3 cups crisped rice cereal
1/3 cup choice of jam
chopped peanuts (optional)
Directions
Line an 8x8 in pan with parchment paper and set aside.
In medium saucepan, over low heat, combine the peanut butter, maple syrup, coconut oil, and vanilla extract. Stir just until fully combined.
Add in the cereal, and mix until the cereal is fully coated.
Transfer into the lined pan, and spread evenly with a spatula.
Place into the freezer for 20-30 minutes.
Once chilled, spread your favorite jam. Sprinkle some chopped peanuts if you want and extra crunch! Cut into 9 bars.

Additional Notes
The Rice Krispies cereal brand is not vegan. You can use gluten-free crispy rice cereal.
You can use any kind of nut butter. I have tried this with almond butter, and I can't tell which is my favorite!
Maple syrup can be substituted with honey.
